Lavender Lemonade

Refreshing in the summer, but still delightful in the winter, this cocktail from the menu of Colorado's So Radish’s restaurant is perfect year round.

Ingredients
  

Lavender Gin Mix

  • 12.5 oz Gin
  • 1 tsp Dried lavender Infused for 3-4 days
  • 3.5 oz Crème de Violette such as Rothman & Winter

Lavender Lemonade Cocktail

  • 1.5 oz Lavender gin mix
  • 1 oz Lemon (fresh squeezed)
  • .5 oz Simple (see recipe notes)
  • 3 inch Sprig thyme
  • Lemon wheel As a garnish

Instructions
 

Making the Lavender Gin Mix

  • Combine 12.5 ounces of gin with 1 tsp of dried lavender and let rest for 3-4 days.
  • Strain the mixture.
  • Add 3.5oz of Crème de Violette and store in a clean liquor bottle, jar or other container (ideally a bottle for easy measuring).

Making the Lavender Lemonade Cocktail

  • Muddle thyme in a mixing tin, then add remaining ingredients, add ice, and shake for about 30 seconds.
  • Double strain (using a fine mesh strainer as the second strainer) into coupe, martini glass or other stemmed glassware. Garnish with lemon wheel and/or an addition sprig of thyme.

Notes

To make the simple syrup, combine ½ cup water and ½ cup cane sugar to a pot. Bring the water to a boil, then turn off heat immediately and whisk until sugar is completely dissolved.
