Combine 12.5 ounces of gin with 1 tsp of dried lavender and let rest for 3-4 days.
Strain the mixture.
Add 3.5oz of Crème de Violette and store in a clean liquor bottle, jar or other container (ideally a bottle for easy measuring).
Making the Lavender Lemonade Cocktail
Muddle thyme in a mixing tin, then add remaining ingredients, add ice, and shake for about 30 seconds.
Double strain (using a fine mesh strainer as the second strainer) into coupe, martini glass or other stemmed glassware. Garnish with lemon wheel and/or an addition sprig of thyme.
Notes
To make the simple syrup, combine ½ cup water and ½ cup cane sugar to a pot. Bring the water to a boil, then turn off heat immediately and whisk until sugar is completely dissolved.
