Lavender Lemonade: A Perfect Summer Cocktail

Refreshing in the summer, but still delightful in the winter, our Lavender Lemonade is a refreshing sip that transports you to sunny days, regardless of the season. Alongside the Rosemary Ginger Margarita, this delicious drink was always one of So Radish’s most popular cocktails year round. 

If you tried this cocktail at the restaurant, it’s worth noting that a few small changes were made to the recipe a couple years back that changed its overall flavor. The recipe I’m posting is the original, and in my opinion, best version of this cocktail, with a sophisticated flavor profile and more notable flavors of lavender and thyme.

Gin Selection

  • Denver’s Jones House Gin
  • New Amsterdam or Monopolowa
  • Beefeater would also be great if you enjoy a bit more juniper.

Infusing the Gin

Combine 12.5 ounces of gin with 1 tsp of dried lavender and let rest for 3-4 days. Strain the mixture, then add 3.5oz of Crème de Violette and store in a clean liquor bottle, jar or other container (ideally a bottle for easy measuring). Or, if you’d like to batch it to serve immediately, just follow the “Pre-batching Lavender Lemonade for Parties” instructions below.

Making the Simple Syrup

  1. Add ½ cup water and ½ cup cane sugar to a pot.
  2. Bring to a boil, then turn off heat immediately and whisk until sugar is completely dissolved.
  3. Cool to room temperature and store in the refrigerator. 

Pre-batching Lavender Lemonade for Parties

  • 1 bottle of Prebatch
  • 10.5oz Fresh squeezed lemon juice
  • 5.25oz Simple syrup
  • 10 Sprigs of thyme

Thoroughly muddle the thyme, then add lemon juice and stir to combine. Pour the mixture through a fine mesh strainer into a large pitcher or carafe, then add the remaining ingredients and stir to combine.

Serving the Pre-Batch

For serving, you have 3 different options. 

  1. Shake the cocktails two at a time and serve neat (no ice) in a coupe or martini glass.
  2. Do not shake the cocktails and simply serve over ice in an 8oz-10oz glass.
  3. Dilute your prebatch by adding 3.5oz of water to the pitcher and serve neat in a coupe or martini glass.

Option 1 will give the Lavender Lemonade a nicer appearance and a silkier mouth-feel. Options 2 & 3 will make it easier for guests to serve themselves so you can enjoy your party.

Tip: Whenever you prebatch a cocktail with lemon or lime juice, try adding a pinch of salt to enhance the flavor!

How Long Does it Keep?

The Lavender Gin Mix will last several months on its own; however, if you’re pre-batching the full recipe, some of the other ingredients have a much shorter shelf-life.

Simple syrup will keep for about a month in the fridge, while lemon juice starts to lose its freshness after day 4. I suggest only pre-batching the full recipe if you’re expecting guests and plan to drink most of it right away.

Ingredients
  

Lavender Gin Mix

  • 12.5 oz Gin
  • 1 tsp Dried lavender Infused for 3-4 days
  • 3.5 oz Crème de Violette such as Rothman & Winter

Lavender Lemonade Cocktail

  • 1.5 oz Lavender gin mix
  • 1 oz Lemon (fresh squeezed)
  • .5 oz Simple (see recipe notes)
  • 3 inch Sprig thyme
  • Lemon wheel As a garnish

Instructions
 

Making the Lavender Gin Mix

  • Combine 12.5 ounces of gin with 1 tsp of dried lavender and let rest for 3-4 days.
  • Strain the mixture.
  • Add 3.5oz of Crème de Violette and store in a clean liquor bottle, jar or other container (ideally a bottle for easy measuring).

Making the Lavender Lemonade Cocktail

  • Muddle thyme in a mixing tin, then add remaining ingredients, add ice, and shake for about 30 seconds.
  • Double strain (using a fine mesh strainer as the second strainer) into coupe, martini glass or other stemmed glassware. Garnish with lemon wheel and/or an addition sprig of thyme.

Notes

To make the simple syrup, combine ½ cup water and ½ cup cane sugar to a pot. Bring the water to a boil, then turn off heat immediately and whisk until sugar is completely dissolved.
