Hey friends! I’m excited to share the recipe for one of So Radish’s most popular dishes, our Fried Cauliflower Tacos!
Famous?
Famous is probably a bit of an overstatement, but they were featured on the cover of Denver’s 5280 Magazine! These fried cauliflower tacos were also one of the most-loved and highly reviewed items on the menu.
Although our Fried Cauliflower Tacos were one of the first menu items finalized for So Radish’s opening menu, I didn’t actually create these for the restaurant. I had a craving and made them for dinner at home, and they were so delicious that I decided to add them to the menu.
Fried Cauliflower Taco Toppings
While our Fried Cauliflower Tacos have been a hit since the restaurant first opened, they got even better when Pickled Red Onions and the Poblano Ranch were added later on. The Pickled Red Onions have been a part of this dish for a couple of years, while the Poblano Ranch was a more recent addition created by my friend Marina by adding roasted peppers, lime juice and a few other ingredients to our existing ranch recipe.
If you want to save time and simplify your meal, try replacing the poblano ranch with another creamy/spicy sauce, such as Bitchin’ Sauce.
Ingredients & Equipment
All of the ingredients for these Fried Cauliflower Tacos can easily found at your local grocery store. If you have any trouble finding gluten-free options, or your just not sure which ones to get, Kroger has gluten-free breadcrumbs, or you can try these gluten-free bread crumbs and King Arthur Flour.
The only special equipment needed for Fried Cauliflower Tacos is a fryer. To achieve taco perfection, you’ll need a fryer. A pot with a thermometer can also work, but for precision, a fryer is the easiest way to go. If you want to purchase a fryer, the Presto Fry Daddy is an inexpensive option that doesn’t take up much space. I’ve had mine for over a decade and it still works great. If you need a bit more capacity, the Presto GranPappy is a solid choice.
Making the Fried Cauliflower Tacos
Preparing the Cauliflower
Since we’re not roasting the cauliflower in advance, you’ll want to cut it into single-bite pieces, not the typical 2-bite size you would expect with cauliflower wings. Battering the Cauliflower
Whisk together batter ingredients and let sit for 10 minutes. Whisk together breading ingredients in a second bowl.
Use your hand or a slotted spoon to dip the cauliflower into the batter. Let the cauliflower rest for 15-20 seconds, then let the excess batter run off before transferring to the breading mixture. Coat thoroughly with the breading mixture, then let rest for about 20 seconds and coat again. Fry for about 3-4 minutes, or until golden brown.
Assembling the Fried Cauliflower Tacos
Fry corn tortillas in skillet over medium heat with a small amount of oil (about ½ tsp is plenty!)
Add a small amount of avocado slices to each tortilla, followed by fried cauliflower, then top with lettuce/cabbage mix, pickled red onions and poblano ranch. Serve with lime wedges and your favorite hot sauce.

Fried Cauliflower Tacos
Equipment
Ingredients
Cauliflower:
- 1 Large head of cauliflower cut into bite-sized pieces (see note)
Batter:
- 1 cup Unsweetened soy milk
- 1 Tbsp Apple cider vinegar
- 1/3 cup Frank’s Red Hot
- 2 tsp Corn starch
- 1 Tbsp Flax seed meal
Breading:
- ¾ cup Gluten-free bread crumbs
- 1/2 cup Gluten-free flour
- 1 Tbsp Chipotle powder
- 1 Tbsp Garlic powder
- ½ Tbsp Onion powder
- ½ Tbsp Sea salt
- ½ tsp Ground black pepper
- 1 tsp Cumin
For Tacos:
- Corn tortillas
- Sliced avocado
- Shredded lettuce and red cabbage 50:50 mixture
- Poblano ranch or other creamy sauce
- Pickled red onions
Instructions
- Fill and preheat deep fryer according to manufacturer instructions.
- Whisk together batter ingredients and let sit for 10 minutes. Whisk together breading ingredients in a second bowl.
- Dip pieces of cauliflower in batter mixture, followed by breading mixture, then fry for about 3-4 minutes.
- Fry corn tortillas in skillet over medium heat with a small amount of oil (about ½ tsp is plenty!)
